I think you are failing to imagine just how big 25' is. This image is from a different game, but it does show the scale well. That Triax X-500 Forager Battlebot is the closest to 25' tall (it is 29.5' tall). Just looking at that thing is enough to know that it wouldn't have too much trouble eating ...

I think the -2 penalty is probably fine for Paladins in any case. I'd interpret the horse fighting as mentioned above; horse doesn't get any attacks if the rider is attacking also. Why not compromise?
Class abilities have a base check of 15 rather than 12 or 18. That way they are still moderately good at what they should be good at and you still have the potential of specialists being better.

I think at some point Knights and Paladins were the same thing and then they were split up for unknown reasons. I don't think there is any way of recharging them by the book - aside from simply creating a new one at least. They are effectively just multi-use scrolls/potions.

I would rule that the spell gives a +1 to AC as the description says the effect is a +1 to AC, but looks and sounds like plate armor for purposes of Move Silently and Hide checks.
